Pumpkin and apple pudding

The best way to celebrate any season is through its classic produce. We made this pudding with pumpkin, apples and warm spices. The texture is close to a rice pudding. The taste will surely remind you of a walk through an enchanted autumnal forest. More enchanting is the fact that we used no sugar in this dessert. Medjool dates sweeten, as well as add a deep caramel flavor. This is also dairy free.

What you need :

8 Medjool dates

2 medium Fuji or Gala apples

1 x 13.6 oz can of coconut milk (Not the ‘light’ variety)

¾ cup pumpkin puree

2 teaspoons ground cinnamon

½ teaspoon ground allspice (or ¼ teaspoon ground clove + ¼ teaspoon grated nutmeg)

1/8th teaspoon salt

½ cup almond flour

1 teaspoon vanilla extract

Sliced almonds for garnishing

What you do :

1. Soak the dates in 1 cup of hot water for 15 minutes.

2. Blitz the dates and the soaking water in a blender to make a puree. Set aside.

3. Core the apples and grate coarsely using a grater or food processor. You don’t need to peel them.

4. In a sauce pan, add the apples, date puree, coconut milk, pumpkin puree, salt and the spices. Put on medium heat and cook for 25 minutes stirring occasionally.

5. Add almond flour and vanilla extract. Cook for 5 more minutes, stirring frequently.

6. Remove from the heat and let cool. It will thicken more as it cools down. Keeping in the refrigerator for 2-3 hours will get you the best consistency.

7. Garnish with sliced almonds and serve cold, at room temperature or slightly warmed up.
